Lloyd’s Wimbledon Strawberries and Fizz

Print article From Delicious Blog

Nothing says Wimbledon like strawberries and cream. This is a grown-up version, in a drink. I like to use Liberty Fields Porter’s Perfection vodka, a Dorset Vodka made from British grain and Porter’s Perfection apples, as the taste is like biting into a fresh apple (find it via MasterofMalt.com or direct on the Liberty Fields website.

Before you make the cocktail, you need to infuse the vodka with strawberries and vanilla for 24 hours. Here’s how…

In a stainless steel or glass bowl, add a whole bottle of vodka. Don’t throw away the empty bottle as you’ll need it later. Add 100g hulled strawberries and one vanilla pod. Cover the bowl and leave the mixture to steep for 24 hours at room temperature, then strain and pour it back into the original vodka bottle. Once bottled, keep in the fridge and it will last up to a month.

Here’s what you need to make the cocktail…

1 egg white
50ml home-made strawberry and vanilla-infused vodka (see above)
25ml fresh lemon juice
15ml sugar syrup
A few fresh strawberries

In a cocktail shaker, add one fresh egg white.   Add the infused vodka, fresh lemon juice, sugar syrup and a couple of chopped strawberries. Shake hard without ice, then open the shaker and add ice, again shaking hard to whip the egg white and combine the ingredients. Strain the mixture into a large wine glass and, to finish, top with sparkling wine (I’m a fan of Furleigh Estate English sparkling wine, but you can use anything you have to hand). Garnish with a strawberry.
